This mélange has been manufactured to EU food standards and is a high quality workhorse for bean-to-bar chocolate production. It is capable of grinding cocoa nib into fine 20 micron chocolate over approximately 48 hours.  
The digital control panel allows adjustment of drum speed and wheel pressure. Control read-outs include speed, pressure, temperature and energy use. The drum has a separate servo motor for tilting the whole drum to pour out the finished chocolate. It also has built-in speed reduction should the chocolate temperature exceed a programmed level. 
This machine is easy to use, clean and maintain. It is very reliable, and all parts are standard sizes/specifications that are readily available from local suppliers. It is built very solidly and capable of running non-stop 24/7, 365 days/year. 
Whilst it's primary function is for chocolate, it can also be used to grind most any nuts or seeds into fine paste, such as chick peas, peanuts, and cashews.
